Chicken Corn Rice Bowl
Our Chicken Corn Rice Bowl is the perfect balance of hearty and wholesome. Tender grilled chicken pairs beautifully with sweet, juicy corn and fluffy rice, creating a comforting bowl full of flavour and freshness.
Ingredients
2 Chicken Breasts
1 Tbsp Lime Juice
1 Tbsp Vegetable Oil
1/2 tsp Cumin Powder
1/2 tsp Chili Powder
1/2 tsp Garlic Powder
1/4 tsp Salt
1/2 tsp Pepper
2 Corn Cobs
1/4 cup Sour Cream
1/4 cup Mayonnaise
1 tsp Minced Garlic
1/4 cup Feta Cheese
1/2 tsp Salt
Cooking Instructions
- Cook 3 cups of rice using your preferred Method.
- Preparing the Chicken
- In a shallow bowl, whisk together lime juice, oil, cum, chili powder, garlic powder, salt and pepper. Rub the chicken breasts in this mixture and let them marinate in the fridge for 10 minutes.
- Heat your pan to medium. Sear the chicken breasts for 6-7 Minutes or until cooked. Set aside to rest for a few minutes, before slicing the chicken breast to desired thickness.
- Prepare the Corn
- Preaheat a pan to medium-high heat. Shuck the corn cobs, leaving the kernels on, and grill until each side is slightly charred. After cooling slightly, cut the corn kernels off the cob using a sharp knife.
- Place the kernels in a bowl. Add sour cream, mayonnaise, garlic, feta, lime juice, and chili powder to the bowl. Combine by stirring and adjust taste to your liking by adding salt.
- To assemble, divide the cooked rice between bowls. Top with the cooked chicken breast and corn mix.
