Couscous & Pomegranate Salad

Bright, zesty, and ridiculously moreish. The kind of salad people ask the recipe for.

Ingredients

  • 2 cup Couscous

  • 1 cup Vegetable Stock

  • 1 Tbsp Olive Oil

  • 1/2 cup Pomegranate Seeds

  • 1/2 cup Cucumber

  • 1/4 cup Red Onion

  • 1/4 cup Fresh Mint

  • 1/4 cup Fresh Parsley

  • 1/4 cup Crumbed Feta

  • 1 Tbsp Toasted Almonds

Cooking Instructions

  1. Place couscous, salt, and 1 tbsp olive oil in a bowl. Pour over boiling water or stock, cover with a plate, and let sit for 5 minutes.
  2. Fluff the couscous with a fork (the satisfying bit).
  3. Toss through cucumber, red onion, herbs, and pomegranate seeds.
  4. Squeeze over lemon juice and drizzle with a little more olive oil. Season to taste.
  5. Top with crumbled feta and toasted almonds — and serve it up!
