Couscous & Pomegranate Salad
Bright, zesty, and ridiculously moreish. The kind of salad people ask the recipe for.
Ingredients
2 cup Couscous
1 cup Vegetable Stock
1 Tbsp Olive Oil
1/2 cup Pomegranate Seeds
1/2 cup Cucumber
1/4 cup Red Onion
1/4 cup Fresh Mint
1/4 cup Fresh Parsley
1/4 cup Crumbed Feta
1 Tbsp Toasted Almonds
Cooking Instructions
- Place couscous, salt, and 1 tbsp olive oil in a bowl. Pour over boiling water or stock, cover with a plate, and let sit for 5 minutes.
- Fluff the couscous with a fork (the satisfying bit).
- Toss through cucumber, red onion, herbs, and pomegranate seeds.
- Squeeze over lemon juice and drizzle with a little more olive oil. Season to taste.
- Top with crumbled feta and toasted almonds — and serve it up!
