Lemon Garlic Butter Salmon

Pan-seared WA salmon fillets finished with a zingy lemon-garlic butter sauce and fresh dill. On the table in under 30 minutes — impressive enough for guests, easy enough for any weeknight.

Ingredients

  • 4 Salmon fillets

  • 2 Tbsp Olive oil

  • 4 Garlic cloves (minced)

  • 60 g Butter

  • 2 - 3 Tbsp Lemon juice

  • 2 Tbsp Fresh dill (chopped)

  • Salt and Pepper

Cooking Instructions

  1. Pat salmon dry with paper towel and season generously with salt and pepper.
  2. Heat olive oil in a large non-stick frypan over medium-high heat.
  3. Place salmon skin-side down and cook for 4–5 minutes until the skin is crisp.
  4. Flip and cook a further 2–3 minutes. Remove from pan and set aside.
  5. Reduce heat to medium. Add butter and garlic to the same pan, stirring for 1 minute until fragrant.
  6. Add lemon juice, stir to combine, then spoon sauce over salmon fillets.
  7. Finish with fresh dill and serve with steamed greens or a crisp salad.

Recipe Notes

Don't move the salmon once it hits the pan — let it crisp up undisturbed. Swap dill for flat-leaf parsley if preferred.
