Lemon Garlic Butter Salmon
Pan-seared WA salmon fillets finished with a zingy lemon-garlic butter sauce and fresh dill. On the table in under 30 minutes — impressive enough for guests, easy enough for any weeknight.
Ingredients
4 Salmon fillets
2 Tbsp Olive oil
4 Garlic cloves (minced)
60 g Butter
2 - 3 Tbsp Lemon juice
2 Tbsp Fresh dill (chopped)
Salt and Pepper
Cooking Instructions
- Pat salmon dry with paper towel and season generously with salt and pepper.
- Heat olive oil in a large non-stick frypan over medium-high heat.
- Place salmon skin-side down and cook for 4–5 minutes until the skin is crisp.
- Flip and cook a further 2–3 minutes. Remove from pan and set aside.
- Reduce heat to medium. Add butter and garlic to the same pan, stirring for 1 minute until fragrant.
- Add lemon juice, stir to combine, then spoon sauce over salmon fillets.
- Finish with fresh dill and serve with steamed greens or a crisp salad.
Recipe Notes
Don't move the salmon once it hits the pan — let it crisp up undisturbed. Swap dill for flat-leaf parsley if preferred.
